Chick Party Recipes: Cherry Chick Cookies
2-1/4 c. unsifted flour
1 t. baking soda
1/2 t. salt
1 c. butter
3/4 c. sugar
3/4 c. light brown sugar
2 eggs
1 t. almond extract
2 c. dried cherries (or Craisins™)
1 package white chocolate chunks (or white chocolate chips)
Preheat oven to 375°. In a medium-sized bowl, stir together flour, baking soda and salt with a wire whisk. Set aside. In a large mixing bowl, use hand mixer to cream butter together with the sugar, brown sugar, eggs and almond extract. Gradually add flour mixture to the creamed mixture, until combined. Stir in dried cherries and white chocolate chunks. Drop dough by tablespoon on to an ungreased cookie sheet. Bake at 375° for 9 to 11 minutes, or until edges of cookies are golden brown. (Makes approximately 4 dozen cookies.)
